Ingredients (serving 3):
- 2 kg Whole Chicken
- 10 Lemongrass stalks
- 1 Root of Ginger
- 4 Purple Onions
- 1 Lemon
- 10 Lime Leaves
- 10g Cashew Powder
- 4 Star Anise
- 5g Chili Powder
Chicken Preparation:
Begin by thoroughly washing the chicken. Rub salt around the chicken, then use a halved lemon to rub the entire body. Rinse with water and drain.
Ingredient Preparation:
- Clean lemongrass, crush, and cut it into medium pieces.
- Crush and slice the onions, placing them in a bowl. Cut the lime leaves into small strips.
- Crush the ginger and tear it into small pieces.
Marinating the Chicken:
In a bowl, combine lemongrass, ginger, onions, lime leaves, 1 tablespoon salt, 1 teaspoon MSG, 1 teaspoon pepper powder, and 1 tablespoon chili powder. Add star anise and mix the spices thoroughly.
Stuff the chicken with the spice mixture, then apply a mixture of salt and cashew powder to the outer skin.
Wrapping the Chicken:
Layer 4-5 banana leaves over the chicken for preservation. Wrap another layer of foil around the chicken.
Apply a moderate layer of clay – not too thin, not too thick. This ensures the chicken grills evenly without burning.
Complete the wrapping with another layer of banana leaves on the outside.
Grilling:
Use firewood or store-bought charcoal. Light the stove and let the charcoal turn pink.
Place the wrapped chicken in the middle of the stove and grill over low heat for 1.5 – 2 hours. Rotate occasionally for even cooking.
Grilled Clay Chicken – Finished Product:
Unwrap the Vietnamese Grilled Clay Chicken to reveal a succulent delight. The chicken retains its natural sweetness while exuding a tantalizing aroma of clay, lemon leaves, and perfectly grilled goodness.
