Ingredients:

For the Spring Rolls:

  • 1 cup cooked and cooled rice vermicelli noodles
  • 1 cup cooked and shredded chicken, shrimp, or tofu (optional)
  • 1 cup julienned carrots
  • 1 cup thinly sliced cucumber
  • 1 cup bean sprouts
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup Thai basil leaves (optional)
  • Lettuce leaves (iceberg or butter lettuce), washed and dried

For the Dipping Sauce:

  • 1/4 cup hoisin sauce
  • 2 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 1-2 tablespoons water (to adjust consistency)

Instructions:

1. Prepare the Ingredients:

  • Cook rice vermicelli noodles according to package instructions, then rinse with cold water and set aside.
  • If using chicken or shrimp, cook and shred or chop into bite-sized pieces.
  • Julienne carrots, thinly slice cucumber, and prepare other filling ingredients.

2. Soften Rice Paper Wrappers:

  • Fill a large shallow dish with warm water.
  • Dip one rice paper wrapper into the water for about 5-10 seconds until it softens.
